The Late Cook is responsible for cooking large quantities of food for patients, cafeteria and special functions 

 

Nutrition Services-Late Cook - Full Time - 10:30am - 7pm - Days Vary - Rotating Weekends required.

 

Education:

Acceptable score on the Cook test.


Experience:

Minimum of one year experience in quantity food preparation.
Experience in therapeutic diet preparation preferred.

Duties:

• Prepares entrees and hot food items for patients, cafeteria and special functions.

• Follows menus, package instructions and recipes.

• Determines the amount of food needed, with a minimum of under/over production and             waste.

• Insures high quality results (food looks and tastes good; not overcooked).

• Utilizes leftovers in a cost-conscious manner.

• Insures that all meats are thawed in refrigerator in advance and completes meat unthaw         list.

• Practices good sanitation when working with food.

• Insures that food is covered, labeled, dated, stored properly and not wasted.

• Insures that hot food is served hot and cold food is served cold.

• Prepares patient meals according to patient menu.

• Insures that food is prepared and portioned according to diet order – i.e. low sodium, ADA,    renal, etc.

• Insures patient plates are attractive, tasty and maintains proper temperatures.

• Insures that all special food items and pureed foods are ready before tray line starts.

• Dismantles hot food line and stores food properly.

• Accepts Team Leader’s authority on patient tray line.

• Prepares cafeteria entrees and hot food according to cafeteria menu.

• Sets up hot food line.

• Insures that food is displayed attractively.

• Maintains food levels during serving hours; keeps pans filled and clean.

• Dismantles hot food line and stores food properly.

• Organizes daily routine to insure that all work is completed on time.

• Prepares food as close to serving time as possible to assure quality.

• Insures that food for patient line and cafeteria line is ready to serve on time.

Physical Requirements and Environmental Conditions

• Physically demanding, high-stress environment

• May be up walking on feet up to 8 hours per day

Must be able to lift 10 pounds or more
