Cook/Diet Aide for The Clary Care Center

 

Full Time Day Shift with rotating days and weekends 6am - 2:30pm and 9:30am - 6:00pm

 

Education / Experience:

Ability to read and write.

Minimum of one year experience in quantity food preparation.

Experience in therapeutic diet preparation preferred.

 

Duties and Responsibilities

  • Prepares entrees and hot food items for residents and special functions.
  • Follows menus, package instructions and recipes.
  • Determines the amount of food needed, with a minimum of under/over production and waste.
  • Insures high quality results (food looks and tastes good; not overcooked).
  • Utilizes leftovers in a cost-conscious manner.
  • Bakes special dessert items as necessary or as time allows.
  • Insures that all meats are thawed in refrigerator in advance.
  • Practices good sanitation when working with food.
  • Insures that food is covered, labeled, dated, stored properly and not wasted.
  • Insures that hot food is served hot and cold food is served cold.
  • Prepares resident meals according to menu.
  • Insures that food is prepared and portioned according to diet order – i.e. low sodium, ADA, renal, etc.
  • Insures that all special food items and pureed foods are ready before trayline starts.
  • Sets up serves hot food items on resident trayline.
  • Dismantles hot food line and stores food properly.
  • Prepares food carts for delivery to The Wilkinson Center.
  • Insures that menu substitutes are recorded.
  • Organizes daily routine to insure that all work is completed on time.
  • Prepares food as close to serving time as possible to assure quality.
  • Insures that routine tasks are completed without overtime.
  • Safely operates and takes care of kitchen equipment: Convection and Conventional Ovens, Steams and Steam Kettles, Gas Grill, Deep Fryer, Food Processor and Blenders, Microwave, Meat Slicers
  • Uses timers and meat thermometers to assure quality.
  • Completes duties on Cooks’ Weekly Cleaning Schedule: Deep Fat Fryer, Cook’s Refrigerator, Microwave and Food Processor Tables, Flour Bins, Spice Shelves, Cooks Area, etc.
  • Insures that all equipment and work areas are left clean before end of shift
  • Insures communication with co-workers, supervisors and with department management.
  • Oversees Diet Aides with food preparation responsibilities and insures that all food is of good quality

  • Attend regular staff meetings and in-services as needed.

Physical Requirements and Environmental Conditions

  • Sitting for extended periods of time (up to 4 hour intervals)
  • Must be able to walk, bend, stoop and reach/lift above your head, without any assistive devices. 
  • Must be able to read documentation in a variety of formats such as in print and electronically.
  • Must be able to hear adequately enough in order to clearly communicate with others and use communication devices such as telephones must be able to hear patients, alarms, call bells, etc.
  • Maintains mental and emotional stability, using a courteous and calm approach in all contacts with patients, visitors and healthcare team members.
  • Must be able to lift 10 pounds or more.
  • Have near normal hearing – able to hear alarms/telephone/normal speaking voice/ webinars
  • Have near normal vision – clarity of vision (both near and far) either corrected on non-corrected, ability to distinguish colors
  • Have good manual dexterity and eye-hand-foot coordination
  • Standing – continuously within the shift (67-100%)
  • Walking – continuously within the shift (67-100%)
  • Climbing – occasionally within the shift (1-33%)
  • Bending/stooping – frequently within the shift (34-66%)
  • Twist at the waist – occasionally with the shift (1-33%)
